Simple Summer Couscous Salad Recipe

Excellent source of dietary fibre.
Good source of Vitamin B3 and Vitamin A.
Source of potassium.

500ml (2 cups) Campbell’s Real Stock Vegetable

2 cups couscous

270g jar sundried tomatoes, drained and sliced (reserving 2 tablespoons oil)

1/2 cup basil leaves, shredded

1/3 cup toasted pine nuts

1/4 cup lemon juice

STEP 1 Bring Campbell’s Real Stock to the boil in a small pan. Pour over couscous in a bowl. Cover and stand for 5 mins before fluffing up grains with a fork.

STEP 2 Transfer to a large bowl and stir through tomatoes, basil and pine nuts.

STEP 3 In a jug, combine reserved oil and lemon juice. Pour dressing over and toss well. Garnish with extra basil leaves.
