Stuffed Zucchini Boats by Foodies of Australia Recipe

4 large zucchinis, stem ends removed
1-2 tbsp olive oil
1 portion quinoa ratatouille
1/2 cup feta cheese
1/4 cup sunflower seeds
Fresh mint, chopped
Serving Suggestion: Barbecue lunch
STEP 1 Preheat the oven to 200 degrees Celsius and grease a baking tray.
STEP 2 Slice the zucchinis in half length wise, and carefully scoop or scrape out the insides with a teaspoon. Place your hallowed zucchini boats skin side down (hollow side up) in your prepared baking tray.
STEP 3 Brush with oil and bake in the oven for 10 minutes until slightly softened. Chef’s Tip: You can also place on the grill flesh side down for 3-5 minutes!
STEP 4 Spoon some ratatouille into the hollows of each zucchini half and top with feta cheese and sunflower seeds. Ratatouille recipe can be found in following link:

STEP 5 Place back in the oven and bake for 10-15 minutes until the feta is slightly melted.
STEP 6 Top with some freshly chopped mint and serve alongside your next barbecue and ENJOY!
