
Risoni Salad Recipe

400g risoni pasta
1L (4 cups) Campbells Real Stock – Vegetable
2 tbs olive oil
1 garlic clove, crushed
2 tbs lemon juice
200g cherry tomatoes, halved
1 cup rocket
2 tbs finely chopped basil leaves
STEP 1 Pour Campbells Real Stock into a medium sized saucepan and bring to the boil, add risoni and cook for 10 minutes or until all of the stock is absorbed.
STEP 2 Add olive oil, garlic, lemon juice, tomatoes, basil and rocket. Stir well to combine.
STEP 3 Serve warm or chilled with your favourite BBQ meats.
