
Real Minestrone Soup Recipe

1 1/2 tbs olive oil
250g bacon, diced
1 onion, diced 2cm x 2cm
1 carrot, diced 2cm x 2cm
2 celery sticks, diced 2cm x 2cm
1L Campbells Real Stock Beef
400g can diced tomatoes
2 tbs tomato paste
1 cup small shell pasta (dry)
1/2 cup frozen peas
1 zucchini, diced
1 cup water
400g can cannellini beans, rinsed
Grated parmesan (to serve)
STEP 1 Heat olive oil in large saucepan. Cook bacon, onion, carrot & celery for 3 minutes until bacon is brown & vegetables have softened.
STEP 2 Add Campbells Real Stock, canned tomato & tomato paste. Bring to the boil.
STEP 3 Reduce heat & simmer, covered for 25 minutes or until vegetables are tender. Stir occasionally.
STEP 4 Add pasta, peas & zucchini and 1 cup water. Boil uncovered for 8 10 minutes.
STEP 5 Stir through beans.
STEP 6 Serve topped with grated parmesan.
