
Quick Kale and Spinach Gnocchi Recipe

2 cups kale, blanched and chopped
1 tbsp olive oil
1 red chilli chopped, sliced
2-3 cloves garlic
2 cups baby spinach
1 can cannellini beans, drained
500mL Campbell’s Bone Broth Chicken
500g Gnocchi
1/2 cup crème fraiche
Extra chilli to serve
STEP 1 Place Kale in a heatproof bowl, pour over boiling water and let it sit for 2 mins. Drain, squeeze out moisture.
STEP 2 Place kale, garlic, spinach, beans and broth into a blender or food processor. Process into a thick paste.
STEP 3 Meanwhile, bring a large pot of water to the boil and cook gnocchi according to directions.
STEP 4 Heat oil in a large frypan, add chilli and cook for 1 min. Add cooked gnocchi, stir for 1 min. Pour over green sauce and stir to combine.
STEP 5 Stir through crème and top with extra chilli.
