Pearl Couscous Salad Recipe

500ml Campbell’s Real Stock Chicken Salt Reduced

1 cup pearl couscous

2 Lebanese cucumbers, diced

1 avocado diced

½ bunch radishes, thinly sliced

½ cup dill, finely chopped

2 tbs lemon juice

2 tbs olive oil

1 tsp Dijon mustard

Salt and pepper

Grilled chicken breast

STEP 1 Bring Campbell’s Real Stock Chicken Salt Reduced to the boil in a medium saucepan. Add couscous, cover and simmer gently for 10 min until liquid is absorbed and couscous is cooked through.

STEP 2 When cool, transfer to a large bowl and stir through cucumber, avocado, radish, and dill.

STEP 3 In a jug, combine lemon juice, oil, and mustard. Season with salt and pepper. Pour dressing over salad and toss well. Hot tip: Serve with chicken breast
