Mushroom Ramen
This vegetarian-friendly dish is loaded with delicious, umami flavours and made with Campbell’s Real Stock Mushroom. The perfect meal to warm you up!

1L Campbell’s Real Stock Mushroom
1 tbsp vegetable oil
2 tbsp white miso paste
270g Ramen noodles
200g firm tofu, drained and sliced
1 bunch of baby Pak choi
Green spring onions and furikake to serve
STEP 1 Heat oil in a medium frypan. Cook sliced tofu until golden on both sides. Set aside.
STEP 2 Heat Campbell’s Real Stock Mushroom in medium-to-large sized saucepan over medium heat. Bring to the boil, add miso and simmer for 2-3 minutes. Add pak choi and cook for a further 1-2 minutes.
STEP 3 Meanwhile, cook noodles in a medium saucepan of boiling water.
STEP 4 To serve, place stock mixture and noodles in a bowl. Top with tofu, spring onion and furikake if desired.
