Moroccan Baked Fish Recipe

High in protein.

2 tbsp olive oil

1 red onion, finely chopped

3 large ripe tomatoes, chopped

1 tbsp Moroccan seasoning

500ml (2 cups) Campbell’s Real Stock Fish

4 x 100g white fish fillets (skin off)

1/4 cup parsley leaves

Mashed potato, to serve

STEP 1 Preheat oven to 200°C/180°C fan forced. Heat oil in a large flameproof casserole dish on high. Cook onion for 2-3 mins until softened. Add seasoning and cook for a further 1 min. Add tomato and Campbell’s Real Stock to the dish. Season to taste. Simmer for 5 mins until reduced slightly.

STEP 2 Place fish in sauce and bake uncovered for 15 mins or until cooked through.

STEP 3 Top with parsley leaves and serve with mash.
