1 tbsp oil
250g beef mince
1 clove garlic, crushed
2 rashers bacon, chopped
2 tbsp no added salt tomato paste
1 Litre pack Campbell’s Real Stock – Salt Reduced Beef
2 sticks celery, diced
2 carrots, diced
2 potatoes, diced
2 zucchinis, diced
1 cup small shell pasta
400g borlotti beans, rinsed and drained
STEP 1 Combine mince and garlic and roll into small balls.
STEP 2 Heat oil in a saucepan over medium-high heat. Cook meatballs until browned on all sides. Add garlic and bacon, and cook for 1 minute.
STEP 3 Add stock and bring to the boil. Stir in tomato paste, celery, carrots and potatoes. Cook for 5 minutes.
STEP 4 Add zucchini and pasta. Cook for 10 minutes or until pasta is just cooked.
STEP 5 Stir in borlotti beans and cook until heated through.
