Easy as Beef Pie Recipe

2 tbs olive oil

1 onion, finely diced

750g beef mince

2 med carrots, grated

250mL Campbell’s Real Stock Flavour Boost Red Wine, Tomato and Basil

1 tbs cornflour

4 sheets puff pastry

1 egg, lightly whisked

STEP 1 Pre heat oven to 220⁰C/ 200⁰C fan-forced. Lightly grease pie dish.

STEP 2 Heat oil in a medium to large saucepan over medium to high heat. Add onion and cook for 1 minute add beef and cook for 10 minutes until starting to change colour, add carrot and cook for a further 2 minutes. Add Campbell’s Real Stock Flavour Boost Red Wine, Tomato and Basil, and simmer for 1-2 minutes. In a small bowl combine cornflour with 1 tablespoon of water add this mixture to beef mixture and stir until sauce has thickened. Set aside.

STEP 3 Meanwhile place pastry over the base of the pie dish. Place mince mixture on top of the pastry. Place another piece of pastry over the mince mixture, adding extra pastry as needed. Pinch the edges to form a lid. Using a knife, make a small incision in the pastry to let steam out as it’s cooking. Brush with egg mixture and bake for 25 minutes.
Serve with peas.
