Baked Mushroom Gnocchi

Make dinner in just 25 min with Campbell’s Baked Mushroom Gnocchi, made with Campbell’s Real Stock Chicken.

500ml Campbell’s Real Stock Chicken

1 tbsp olive oil

2-3 cloves garlic, crushed

1 large brown onion, finely diced

500g button mushrooms, sliced

40g butter

½ cup thickened cream

500g gnocchi

CRUMB TOPPING
25g butter
1 cup dried breadcrumbs
2 tsp fresh thyme leaves

STEP 1 Heat olive oil in a large saucepan. Add garlic, onion and mushrooms. Cook for 5 min until softened.

STEP 2 Add butter and stir until melted. Add flour and cook for 1 min, slowly whisking in the Campbell’s Real Stock Chicken. Bring to the boil and simmer until thickened slightly. Stir in cream.

STEP 3 Meanwhile, cook gnocchi in a large pan of boiling water for 2 min or until they float to the surface. Drain well and stir into sauce.

STEP 4 CRUMB TOPPING: Melt butter in a small frying pan on medium. Add breadcrumbs and toast until brown. Sprinkle over gnocchi mixture in pan and top with thyme leaves. Serve.
