Baked Mushroom Gnocchi

Ingredients

  • 500ml Campbell’s Real Stock Chicken
  • 1 tbsp olive oil
  • 2-3 cloves garlic, crushed
  • 1 large brown onion, finely diced
  • 500g button mushrooms, sliced
  • 40g butter
  • ¼ cup flour
  • ½ cup thickened cream
  • 500g gnocchi
  • CRUMB TOPPING: 25g butter, 1 cup dried breadcrumbs, 2 tsp fresh thyme leaves

Preparation

Step 1
Heat olive oil in a large saucepan. Add garlic, onion and mushrooms. Cook for 5 min until softened.
Step 2
Add butter and stir until melted. Add flour and cook for 1 min, slowly whisking in the Campbell’s Real Stock Chicken. Bring to the boil and simmer until thickened slightly. Stir in cream.
Step 3
Meanwhile, cook gnocchi in a large pan of boiling water for 2 min or until they float to the surface. Drain well and stir into sauce.
Step 4
CRUMB TOPPING: Melt butter in a small frying pan on medium. Add breadcrumbs and toast until brown. Sprinkle over gnocchi mixture in pan and top with thyme leaves. Serve.
