One Pot Honey Soy Chicken & Rice Recipe

1 tbsp oil
4 cloves garlic, crushed (half for the sauce)
1 tsp ginger, grated
1 onion
500g Chicken thighs, skinless, boneless
2 cups SunRice Jasmine Rice
3 cups Campbell’s Real Stock Chicken Unsalted
3 tbsp soy sauce
2 tbsp Honey
STEP 1 Mix garlic, soy sauce and honey in a large bowl. Add chicken, mix and leave to marinate for 10 min.
STEP 2 Add oil to a large pot over medium – high heat. Add chicken to pot (reserve left over sauce). Brown chicken on both sides for 2-3 min and set aside on a plate. Add onion, remaining garlic and ginger to pot, cook for 1-2 min until onions are translucent.
STEP 3 Add SunRice Jasmin Rice. Stir through and add Campbell’s Real Stock Chicken Unsalted and remaining sauce. Add chicken to the pot on top of the rice. Cover and bring to a simmer, then lower to medium heat.
STEP 4 Cook for 12 -15 min until stock is absorbed, then remove from heat and Rest for 10 min. Fluff rice and serve with sesame seeds, shallots and broccoli.
