Chicken with Olives and Tomato Recipe

1 tbsp olive oil

1kg chicken drumsticks (about 6)

1 red capsicum, chopped

250mL Campbell’s Real Stock Flavour Boost Red Wine, Tomato and Basil

1/3 cup pitted kalamata olives

Serve with potato wedges and garnish with parsley

STEP 1 Preheat oven to 200°C/ 180°C fan forced. Heat oil in a large ovenproof pan on high. Cook chicken until browned all over.

STEP 2 Add capsicum and cook for 2 mins. Add Campbells Real Stock Flavour Boost Red Wine, Tomato and Basil, and olives.

STEP 3 Cover with lid and bake for 20 mins. Remove lid and bake for a further 10-15 minutes until chicken is cooked and sauce thickens.

STEP 4 Serve with potato wedges and garnish with parsley.
