Ingredients

  • 500gm chicken thigh fillets, cubed
  • 2 tsp (4g) smoked paprika
  • 2 tsp (4g) ground cumin
  • 2 tbsp (28g) tomato paste
  • 200gm chopped and peeled Kent pumpkin
  • 200gm chopped and peeled sweet potato
  • ½ cup (43g) 1 red capsicum, chopped
  • Campbells Real Bone Broth Gut Goodness 500Ml
  • 2 cups (98g) baby spinach leaves
  • 1 tbsp (20g) of lactose free natural yogurt to serve
  • 1 cup (172g) of canned chickpeas, drained

Preparation

Step 1
Heat oil in a large frypan over medium heat. Cook until soft. Add chicken and cook for 5 mins. Add spices and tomato paste, cook for 1 min.
Step 2
Add pumpkin, capsicum, chickpeas, and Campbell’s Bone Broth, stir well until well combined and bring to a boil, return to a simmer for 20 mins or until pumpkin is cooked through and starting to soften.
Step 3
Add spinach leaves. Stir until wilted and remove from heat.
Step 4
Serve with natural yogurt and coriander
