Easy Beef Pho

Ingredients

  • 500ml Campbell’s Bone Broth – Beef
  • ¼ tsp Chinese five spice powder
  • 1 clove garlic, crushed
  • 150g zoodles (zucchini noodles)
  • 1 bunch bok choy, washed and chopped
  • 2–3 tsp soy sauce
  • 150g beef eye fillet, very thinly sliced
  • Fresh coriander leaves, sliced red chilli, sliced green spring onions and bean sprouts, to serve

Preparation

Step 1
In a medium saucepan, combine Campbell’s Bone Broth – Beef, five spice powder and garlic. Bring to the boil.
Step 2
Reduce to a simmer and add zoodles and bok choy. Simmer for 1–2 minutes, then stir in soy sauce. Remove from heat.
Step 3
Add beef slices to the hot broth — they will cook through in the residual heat.
Step 4
Ladle into bowls and top with fresh coriander, mint, sliced chilli, spring onions, and bean sprouts. Add extra soy sauce to taste.

Notes

  • You can substitute zoodles with fresh or dried rice noodles if preferred.
