225g fresh hokkein noodles
1 tbs oil
400g chicken thigh fillets, trimmed, thinly sliced
1 L Campbell’s Thai Stock Base
1 red capsicum, diced
100g snow peas, trimmed, sliced
STEP 1 Soak noodles in a bowl of boiling water for 2 minutes until softened. Drain and separate with a fork.
STEP 2 Meanwhile, heat oil in a medium saucepan, add the chicken, and cook for 5 minutes until browned.
STEP 3 Add Campbell’s Thai Stock Base and bring to the boil. Add capsicum and snow peas and simmer for 2 minutes. Add noodles and simmer for 2 minutes.
STEP 4 Ladle soup into bowls.
