Ingredients

  • 500ml (2 cups) Campbell’s Real Stock Vegetable
  • 2 cups couscous
  • 270g jar sundried tomatoes, drained and sliced (reserving 2 tablespoons oil)
  • 1/2 cup basil leaves, shredded
  • 1/3 cup toasted pine nuts
  • 1/4 cup lemon juice

Preparation

Step 1
Bring Campbell’s Real Stock to the boil in a small pan. Pour over couscous in a bowl. Cover and stand for 5 mins before fluffing up grains with a fork.
Step 2
Transfer to a large bowl and stir through tomatoes, basil and pine nuts.
Step 3
In a jug, combine reserved oil and lemon juice. Pour dressing over and toss well. Garnish with extra basil leaves.

Notes

  • Serve with BBQ lamb cutlets.
