Quick Kale and Spinach Gnocchi

Ingredients

  • 2 cups kale, blanched and chopped
  • 1 tbsp olive oil
  • 1 red chilli chopped, sliced
  • 2-3 cloves garlic
  • 2 cups baby spinach
  • 1 can cannellini beans, drained
  • 500mL Campbell's Bone Broth Chicken
  • 500g Gnocchi
  • 1/2 cup crème fraiche
  • Extra chilli to serve

Preparation

Step 1
Place Kale in a heatproof bowl, pour over boiling water and let it sit for 2 mins. Drain, squeeze out moisture.
Step 2
Place kale, garlic, spinach, beans and broth into a blender or food processor. Process into a thick paste.
Step 3
Meanwhile, bring a large pot of water to the boil and cook gnocchi according to directions.
Step 4
Heat oil in a large frypan, add chilli and cook for 1 min. Add cooked gnocchi, stir for 1 min. Pour over green sauce and stir to combine.
Step 5
Stir through crème and top with extra chilli.
