Ingredients

  • 500ml Campbell’s Real Stock Chicken Salt Reduced
  • 1 cup pearl couscous
  • 2 Lebanese cucumbers, diced
  • 1 avocado diced
  • ½ bunch radishes, thinly sliced
  • ½ cup dill, finely chopped
  • 2 tbs lemon juice
  • 2 tbs olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper
  • Grilled chicken breast

Preparation

Step 1
Bring Campbell’s Real Stock Chicken Salt Reduced to the boil in a medium saucepan. Add couscous, cover and simmer gently for 10 min until liquid is absorbed and couscous is cooked through.
Step 2
When cool, transfer to a large bowl and stir through cucumber, avocado, radish, and dill.
Step 3
In a jug, combine lemon juice, oil, and mustard. Season with salt and pepper. Pour dressing over salad and toss well. Hot tip: Serve with chicken breast
