Massaman Beef Bowl

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, crushed
  • 500g beef strips
  • 3 medium potatoes (approx. 450g), peeled and cut into 1.5cm cubes
  • 2–3 tbsp Massaman curry paste
  • 2 cups Campbell’s Beef Stock
  • 1 cup frozen peas
  • 140ml coconut milk
  • ½ lemon, juiced
  • Serve with steamed rice, roasted peanuts and chopped coriander

Preparation

Step 1
For the curry sauce, heat oil in a large fry pan, add onion and garlic. Cook for 2 min.
Step 2
Add in beef strips and cook for 5 min, add potato, cook for 5 minutes.
Step 3
Add curry paste and cook off for 1 min, pour in stock, bring to the boil and simmer for 10 min or until sauce has thickened.
Step 4
Stir in peas, coconut milk and cook for 2 min. Add in lemon juice to taste.
