Chicken & Chorizo Prepped Paella

Ingredients

  • 1 large onion, finely chopped
  • 4 cloves garlic, crushed
  • 500g chicken breast fillets, cubed
  • 110g chorizo, chopped
  • 4 tsp paprika
  • 2 cups medium grain rice
  • 1 red capsicum, finely chopped
  • 4 tsp tomato paste
  • 4 tsp tomato paste
  • 4 cups (1L) Campbell’s Chicken Stock

Preparation

Step 1
Preheat oven to 180°C (fan-forced).
Step 2
In four 500ml capacity oven-safe dishes, divide all ingredients evenly, placing 1 cup of Campbell’s Chicken Stock into each dish. Stir well to combine.
Step 3
Cover each dish tightly with foil and bake for 40–45 minutes, or until the rice is cooked and the liquid has been absorbed.
Step 4
Remove from oven and allow to cool slightly. Once cooled, refrigerate until ready to serve or reheat.
