2 tbsp olive oil
2 cups long grain rice, rinsed
500ml (2 cups) Campbell’s Real Stock Fish
500g jar Napolitano pasta sauce
400g skinless white firm fish fillets, cut into 3cm cubes
250g pkt Greek feta, crumbled
Chopped parsley, to garnish
STEP 1 Preheat oven to 200°C/180°C fan forced. Heat oil in a large ovenproof pan on medium. Add rice, stirring for 1 min. Add Campbell’s Real Stock and pasta sauce. Bring to the boil.
STEP 2 Bake, covered for 15 mins. Add fish and gently stir through. Bake for a further 10 mins until fish is cooked through. Top with crumbled feta.
STEP 3 Garnish with chopped parsley.
