Lamb Shanks Recipe

1 tbsp olive oil

4 lamb shanks

¼ cup plain flour

250mL Campbell’s Real Stock Flavour Boost Garlic & Rosemary

400g can crushed tomatoes

500g sweet potato, peeled cut into 4cm chunks

Serve with beans

STEP 1 Heat oil in a large frying pan. Toss lamb in flour that has been seasoned with salt and pepper; shake off excess. Cook lamb over high heat until browned all over. Transfer to the bowl of a slow cooker.

STEP 2 Add Campbells Real Stock Flavour Boost Garlic & Rosemary, tomatoes and sweet potato. Cover and cook for 6-8 hrs on the low setting or until lamb is soft and falling off the bone.

STEP 3 Remove lamb and potato from the slow cooker, cover to keep warm. Turn the cooker to high setting and simmer, uncovered for 20 mins or until sauce thickens slightly.

STEP 4 Serve lamb and potatoes with sauce. Serve with beans.
