500 mL Campbell’s Real Stock Fish
2 tbsp oil
1 large onion (200g), sliced thinly
500g white fish fillets, cut into large pieces
2 tsp curry powder
1 cup basmati rice, rinsed in a sieve until water runs clear
Green spring onion, to serve
STEP 1 Heat oil in a heavy-based frying pan. Add onion and cook, stirring, over medium heat for 3-4 minutes, add curry powder and cook for 1 minute.
STEP 2 Add drained rice to pan and stir. Add Campbell’s Real Stock Fish and bring to the boil. Reduce heat to low and cook, covered for 15 minutes until rice is tender.
STEP 3 Place fish over rice, cover and cook for 8-10 minutes until fish is just cooked. Stand for 5 minutes.
STEP 4 Top with green spring onions.
